Seedy breakfast cereal

This cereal is great for those who are gluten free, dairy free or involved in Get Me Healthy's Six Week Food Challenge. It contains seeds, nuts and spices. It is delicious and very nutritious.

You need:

(Makes a 1L jar - if you want to make less, divide recipe accordingly)

- 1 Jar

- 1 ½ cups flaxseeds/linseeds

- ¼ - ½ cup almonds

- ¼ cups chia seeds

- ¼ - ½ cup pumpkin seeds

- 1 tsp vanilla essence

- 1 tsp mixed spice (you could also add cinnamon, cloves or nutmeg)

- 2 cups of water

Method:

- Combine flaxseed, rice bran/flakes and grains

- Stir in nuts, seeds and spices. (Also, stir in dried fruits if using)

- The jar should be ¾ full

- Stir the water in batches and mix in well

- Cover and refrigerate overnight

- In the morning, the cereal should scoop out firm but still moist

For breakfast

- Every morning, place 3-5 tbsp of mixture with ¼ - ½ cup of milk (either cows, rice, almond, soy)

- Bring the cereal to a bubbling simmer

- Turn off heat and stir

- Place paper towel over the top and “steam cook” for 7 minutes

- It should end up with a porridge consistency

- Can keep in fridge up to a week
