Banana bread

Bananas are high in vitamin B6, manganese, vitamin C, potassium, fiber, copper and biotin. They are a great fruit because they can enhance the cardiovascular system due to the potassium content. Thus, improving blood pressure. They have chemicals which have a similar structure to cholesterol. This may help to improve cholesterol levels. The high fiber content helps to improve bowel motility and feed our friendly bacteria. They are great for athletes as they are low on the Glycemic Index (GI). Thus, slowing the sugar in to the blood stream, giving them a longer sustained energy.

You need:

- 1 & 1/2 cup gluten free self-raising flour

- 1 Cup coconut sugar

- 2 Eggs

- 2-3 Bananas

- 1 tsp Vanilla essence

- 1 tsp cinnamon

- 2 tbsp. Olive oil

- 2 tbsp. Almond milk

- Extra cinnamon and sugar

Method:

- Preheat oven to 180 degrees Celsius

- Line loaf tin

- Combine flour, sugar and cinnamon

- Beat eggs and add to mixture

- Mash bananas with vanilla essence and add the mixture

- Mix together

- Add oil and almond milk and mix in well

- Pour mixture in to loaf tin

- Sprinkle extra sugar and cinnamon on top

- Bake in oven for 30-40 minutes (When knife comes out clean)

- Allow to cool before serving
