Tofu, Cauliflower sliders
I've spoke about cauliflower in a previous post and benefits it has to us. I thought tofu (soy) would be good to talk about. You may or may not know, that there have been studies that have shown a link between soy and cancer. This is due to the oestrogenic properties soy has due to its ingredient Isoflavones; a group of phytoestrogens. What this means, is that soy mimics oestrogen in the body. However, there is no clear evidence to show that soy does induce cancer at all. I think we need to remember that everything in moderation (including moderation..) is ok for us.
Furthermore, studies suggest that women with menopausal symptoms of hot flushes can reduce these with intakes of soy with the combination of omega-3 (in particular; flaxseed).
Soy is an excellent source of protein and contains minerals; calcium, manganese, copper, selenium, phosphorus, iron, magnesium, zinc and vitamin B1.
- ½ Head cauliflower
- 1 tsp. garlic
- ½ tsp. Himalayan salt
- ½ tsp. pepper
- 1 tsp celery salt
- 1 tsp. chili seasoning
- 1 ½ eggs
- ½ - 1 cup almond flour/meal
- Sesame seeds
- Firm tofu
- Blend cauliflower in food processor to a fine texture
- Squeeze as much liquid as you can from cauliflower by placing in muslin cloth or tea towel
- Add cauliflower to bowl
- Add herbs, eggs and flour and mix well together
- Form the mixture in to burger shaped moulds
- Place on baking tray
- sprinkle sesame seeds on top
- Cook at 200 degrees Celsius until top of buns are firm (keep an eye on them to ensure they dont burn) - Approximately 20-30 minutes.
- Cook tofu in pan
- Pull out cauliflower buns from oven and put on to plate
- Add your choice of toppings
- Cut tofu and place on top.
